Energy Building Banana Bread

As the cool weather of fall settles in, there's nothing quite like the smell of banana bread cooking in the oven...unless of course it's biting into a warm slice!

Regular banana bread with its refined white sugar and enriched white flour is nothing short of a dietary nightmare.

Refined white sugar is one of the most toxic substances on our planet. It binds to proteins within our body and makes them unable to be utilized properly by our body. They get taken into our cells where they reek havoc, causing inflammation, cardiovascular problems, immune system destruction, and long-term chronic diseases. On top of that, it's literally addictive to our brain. The more we eat it, the more we crave it. Scientists compare white sugar addiction to cocaine or heroin - it's that hardcore. 

White flour has no nutritional value whatsoever as the refinement process strips it all out and turns it into a refined carbohydrate. It's not seen by our body as a grain or wheat any longer, meaning we can no longer use it for energy. Instead our body processes it as a starch, which is the worst news ever! We process starch in the same way we processes sugar - it jacks up our blood sugar and then throws us down into a serious energy crash. Over time, this can lead to obesity and cardiovascular problems, not to mention starving our cells of the real nutrition they need to power our body. 

We know bananas are at least great though, right? With potassium and magnesium galore, they are fantastic after working out to replace the minerals you lost when sweating, ensuring you don't end up with muscle cramps or an irregular heart beat. They also provide us with vitamin B6 which is involved in energy metabolism, transporting oxygen to our cells, and bolstering our immune system. 

One other thing banana bread has going for it are the eggs. Protein, protein, protein! But they aren't just your average protein, they are a complete protein. This means they contain the 9 essential amino acids (small proteins) that our body can't naturally produce on its own. If we don't take in these 9 essential proteins, our body won't function at its best. Bananas also have a ton of vitamins, folate, choline, omega-3 fats, potassium, magnesium, etc. 

So, what's a banana-loving, health enthusiast to do? Never eat banana bread again? No way! 

Here's our suggestion to do banana bread a BETTER way.

1. Swap the white flour for coconut flour: Because coconut flour is not refined, it can be used by our body as carbohydrates are intended to be used - as long-term energy fuel. It contains medium chain fatty acids which are the perfect food for our cells to be able to power muscle recovery and muscle building. 

2. Swap the white sugar for maple syrup or raw honey: Yes, maple syrup and honey are sugars, but they are natural sugars and our body can utilize them safely for fuel for reasons similar to the coconut flour. The sugars haven't been processed, refined, or twisted in any way and so while they do raise our blood sugar levels, they counter that with the massive amount of natural minerals, vitamins, and antioxidants they offer us. (Never use processed honey in the cute little squeezable bear. That IS refined sugar and can act like white sugar in your system. Look for honey that says "raw" right on the front.)

INGREDIENTS

3 ripe Bananas
3 medium Eggs, lightly whisked
1/4 cup Maple Syrup or Raw Honey
1/4 teaspoon Vanilla Extract
1/4 cup Coconut Flour
3/4 tsp Baking Soda
1/2 tsp Himalayan Salt

INSTRUCTIONS

1. Preheat the oven to 350 and grease a loaf pan. We prefer to use raw butter or coconut oil for this job. 

2. Peel and mash the bananas in a medium bowl. Add the eggs, maple/honey, and vanilla extract to the bowl and mix well. When incorporated, add in the coconut flour, baking soda, and salt and mix everything together. 

3. Pour the mixture into your loaf pan. 

4. Back for about 50 minutes or until a tester inserted in the center of the banana bread is clean. Let cool, slice, and enjoy!
